But it came back on 5 minutes later and all was fine again. We drank red wine, made pasta and watched movies (and the Weather Channel). The next day we awoke to a snow drifts blocking us in the house, and our neighbor across the street's entire car under snow. So I baked cookies, and banana muffins and made hot chocolate. This is not a complicated cookie recipe, at all. But they were warm and gooey and just what we needed on our Snow Day. Hope everyone has been plowed out!
- 1 cup butter, softened
- 1 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 cup white chocolate chips
- Preheat oven to 350 degree
- In mixer, beat butter, sugars, eggs, and vanilla until light and fluffy.
- In a separate bowl, combine the flour, cocoa, baking soda, and salt.
- Gradually add the flour mixture into the butter mixture until well blended. (Dough will be thick)
- Mix in the chocolate chips.
- Drop by rounded teaspoonfuls onto ungreased cookie sheet, or line baking sheets with parchment paper and place cookies on parchment to prevent sticking. Pat down dough slightly.
- Bake for 8 to 10 minutes in the preheated oven. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
